Great question! There are lots of things you could do in San Jose. To start, you may want to check out the related blog post I wrote titled “10 Things To Do In And Around San Jose”: https://costaricatravelblog.com/what-to-do-in-san-jose/ – the article talks about things to do in the heart of the capital, which is great if you don’t want to stray far from the city.
Alternatively, if you plan to stay on the outskirts of San Jose, perhaps hear Alajuela (the city where the SJO Airport is located), you may find my blog post “5 Things To Do In And Around Alajuela Costa Rica” helpful: https://costaricatravelblog.com/things-to-do-in-alajuela-costa-rica/- the article focuses on attractions outside of the city of San Jose. Most can be accessed in a rental car or via a guided tour/excursion.
