I’d recommend checking out a horseback riding-specific company, not just a general tour company that happens to offer horseback riding among a list of other tours. My guess is that they’ll be more likely to allow you to safely demonstrate your riding skills, such as galloping. Which beach destinations do you plan to visit during your trip? If you haven’t yet settled on those, I’d recommend checking out Horse Jungle in the Samara area (on the Nicoya Peninsula). They offer a few different horseback riding experiences that explore less busy beaches, where you’ll have more space to ride (and hopefully gallop) away from other people.
